The easiest meal you’ll make all month! This is a throw together salad and it is delicious! So when you need quick and easy but also scrumptious, this is the answer! This is also wonderful as a side salad with a summer bbq or roast chicken
Broad Bean and Crispy Prosciutto Salad
Serves 4 for lunch or as a side salad
Prep time 15 minutes
Cook time 5 minutes
250g Broad beans, shelled and podded
100g Prosciutto slices
1 tsp Dijon Mustard
1/4 tsp Honey
1 Lemon, juiced
50ml Extra Virgin Olive Oil
In a small bowl, whisk together the dressing ingredients with seasoning and set aside.
Bring a large frying pan to a high heat with no oil and lay the prosciutto slices in. They should sizzle and shrink immediately. Cook for 2-3 minutes or until crisp and golden. Remove and allow to cool and firm up.
In a large bowl, add the rocket and watercress, sprinkle over the broad beans and snap the prosciutto into shards and sprinkle on top. Drizzle with the dressing and serve immediately.
