Chorizo and Bean Chilli – Camping Style

This Chorizo and Bean Chilli is stupidly easy but so so good! Cooked outside, rustic style or inside on the hob, it’s a winner! The flavour comes from the slow cooked veg and then the delicious fats from the chorizo. Cook it up for a party and team this up with some jacket potatoes, tortilla chips or rice and everyones happy!

Chorizo and Bean Chilli 

Serves 4

Prep time 20 minutes
Cook time 1 hour 

2 tbsp Olive oil
1 Onion, finely chopped
2 Carrots, diced
2 Celery stalks, diced
2 Peppers, diced
2 tbsp Hot Smoked Paprika
1 tbsp Ground Cumin
200g Chorizo, diced
3x400g Various Tinned Beans
500g Passata 

In a large pan, heat the olive oil and fry the onion, carrot and celery until softened. Add in the peppers and cook for a further 3-4 minutes before adding the spices and chorizo. Cook gently for 5-7 minutes or until the chorizo fat has started to release.

Add in the drained beans and passata with seasoning and stir well to combine. Bring to the boil and then allow to simmer for 20-25 minutes. Once the sauce has reduced and thickened slightly, serve immediately.
