Campfire Waffles with Fruit Compote

Autumn has officially arrived! But don’t let the drizzle put you off, the English countryside is so beautiful at this time of year and we need to get outside and keep cooking. Sausages and burgers aren’t on the menu but campfire waffles will hit the spot!

Campfire Waffles with Fruit Compote 

Makes 10-12 Waffles

Prep time 15 minutes
Cook time 20 minutes 

Waffles:
300g Plain Flour
1 tsp Bicarbonate of Soda
1 tbsp Caster Sugar
4 Eggs, beaten
50g Butter, melted
550ml Milk 

Compote:
400g Mixed Seasonal fruit (such as raspberries and strawberries)
1 tbsp Caster sugar
Double cream, to serve 

In a large bowl, add the flour, bicarbonate and sugar and make a well. Whisk together the eggs and milk and pour gradually into the well and whisk until smooth. Stir through the butter and set aside. 

Heat the waffle iron and cook the waffle batter one at a time, turning once halfway through until you have used all the batter.

Meanwhile, chop the seasonal fruit and add the sugar into a small pan and heat gently until the fruit softened and the mixtures begins to go jammy. 

Once the waffles are cooked, serve a stack of 3-4 waffles topped with compote and double cream.
