New Potato and Smoked Cheddar Frittata
Cooking in the great outdoors – what could be better! But luckily, these recipe can work perfectly well inside if birds and trees aren’t your thing! It is wonderfully simple and the addition of the smoked cheddar makes it extra special. It’s so easy to slice up and serve with a salad.
Make sure your pan is non-stick to avoid any issues.

Cook time 20 minutes
1 tbsp Olive Oil
500g New Potatoes, sliced to £1 coin thickness
10 Large Eggs, beaten
25g Parsley, chopped
10g Oregano, chopped
150g Smoked Cheddar
In a large, non-stick pan, add in the olive oil and fry the new potatoes gently until they start to go golden. Whisk the herbs and some seasoning through the eggs and then add in the butter to the potato pan to melt and follow with the egg mixture. Shake the pan gently to distribute the egg evenly between the potatoes. Top with chunks of smoked cheddar and gently cook the frittata until completely cooked through. Serve in large triangles.
