This is one of my favourite things to eat in the summer! It’s so beautiful and can all be grown right in your garden – granted, I didn’t do that this time but it’s perfect if you want to go all ‘The Good Life’. It’s light and fresh and perfect for a picnic or bbq and ready in under 10 minutes!
Serves 4-6 as a side salad
Prep time 10 minutes – at most!
400g Mixed coloured Cherry and Baby Plum Tomatoes, halved and quartered
1/2 Red Onion, very finely diced
1/2 Cucumber, halved and sliced
4-5 Spring Onions, finely sliced
10g Dill, roughly chopped
1 tbsp Toasted Sesame Seeds
2 tbsp Very Good Extra Virgin Olive Oil – do not underestimate the power of an amazing extra virgin olive oil, I’d eat it with cardboard, it’s that good!
Toss together the cherry tomatoes and red onion and sprinkle with a little salt and pepper and drizzle over 1 tbsp of the EVOO. Allow to sit for 20-30 minutes so the salt can work into the tomatoes. Once rested, add in the cucumber, spring onions, dill and remaining EVOO and toss well to combine. Pile into a large bowl and sprinkle over the sesame seeds. Et Voila! Simple is best!
