These chocolate tiffins could not be easier! I’ve swapped out the traditional digestive biscuit for Amaretti pieces for a much richer flavour. They are so moorish and perfect to make with children.
Makes 10-12 pieces
Prep time 20 minutes
Cook time 10 minutes
250g Dark Chocolate, finely chopped
150g Milk Chocolate, finally chopped
5tbsp Golden Syrup
200g Glace Cherries
100g Mixed Nuts
250g Amaretti Biscuit, lightly crushed
100g Mini Pink and White Marshmallows
In a large, heatproof bowl, add in the chocolate, butter and golden syrup and place on top of a simmering pan of water. Stir occasionally until the mixture is completely combine and melted.
Meanwhile, line a 20×30 tin with greaseproof paper and set aside.
Remove the chocolate bowl from the heat and stir through the glace cherries and nuts first, followed by the amaretti biscuit pieces and marshmallows. Make sure all the ingredients are coated with the chocolate and then transfer into the lined tin. Press the mixture into the corners and flatten as much as possible on top without crushing the biscuits. Cover with cling film, transfer to the fridge and chill for at least 2 hours until the mixture is firm. Once ready to serve, cut into 10-12 bars.
