Valentine’s Day Cherry Clafoutis

Perfect for Valentines Day. A Clafoutis is a French baked dessert from the Limousin region, traditionally using seasonal fruits. It is really easy to make and even easier to eat and enjoy. You can make the batter earlier in the day so it is brilliant for a dinner party or date night as it is so quick to get in the oven

Cherry Clafoutis
Serves 4-6
Prep time 20 minutes plus macerating

Cook time 35 minutes

400g Cherries, halved and pitted
75g Caster Sugar
50g Plain Flour
20g Butter, melted
2 eggs, beaten
260ml Milk
1 Lemon, zested

In a bowl, combine the halved cherries with the caster sugar and allow to macerate for 2 hours.

Preheat the oven to 180c/160fan. In a large bowl, combine the flour, melted butter, eggs, lemon zest and gradually whisk in the milk. Spoon the halved cherries into an ovenproof flan dish and add the any juices and remaining sugar into the batter, stir to combine.

Pour the batter over the cherries and bake in the oven for 30-35 minutes or until puffed and golden. Serve hot with cream or ice cream.
