Spicy Confit Chicken Wings

Perfect as a snack or starter! They take a while but it is completely worth it, the chicken becomes tender and full of flavour.

Spicy Confit Chicken Wings
Serves 4 as a starter
Prep time 20 minutes
Cook time 2 hours 45 minutes


8 Garlic cloves, sliced
2 tbsp Thyme leaves, picked
2 tsp Chilli Flakes
1 Lemon, juiced
1 tbsp Brown Sugar
40g Sea Salt

Chicken Wings:
32-48 Chicken Wings
1 l rapeseed oil

Spice Rub:
2 tbsp Garlic salt
1 tbsp Thyme leaves, picked
1 tsp Cayenne Pepper

Blue cheese Dip:
300ml Soured Cream
100g Blue Cheese, crumbled
2 Garlic cloves, crushed
1 Lemon, juice
1/2 tsp Hot Smoked Paprika

Mix the marinade ingredients together in a large food together until well combined. Add the chicken wings into bag and rub the chicken wings until they are completely coated. Seal and chill for at least 8 hours.

When the wings are marinated, preheat the oven to 160c/140fan. Take the wings out of the marinade and wipe off as much as possible, do not wash as that would remove all of the flavour. Place them in a large, deep baking tray and pour over the oil. Make sure the wings are completely covered and top with foil. Bake in the bottom of the oven for 2.5 hours.

Once the wings are cooked, remove them from the oil and drain well on a wire rack. Preheat the grill to medium and grill the wings for 5-10 minutes turning a few times until crispy and golden. While they are grilling, combine the spice rub in a large bowl and when the wings are ready tip straight into the bowl and sprinkle lightly with the dusting. Shake off any excess rub and lay on a large platter. Combine all the ingredients for the dip and serve in a bowl in the centre on the wings.
