Chestnut and Cheddar Sausage Rolls

These are the BEST sausage rolls you’ve ever tried. The addition of the soft caramelised onions, chestnut and cheddar make those a world of flavour. Perfect for lunches, snacks or parties.

Chestnut and Cheddar Sausage Rolls

30g Butter
1 Shallot, finely diced
1 Garlic clove, crushed
350g Sausage Meat
50g Extra Mature Cheddar
50g Chestnuts
320g Pre-rollled Puff Pastry
1 Egg, to glaze
Nigella seeds to sprinkle
English mustard, to serve

In a small pan, melt the butter and sautΓ© the shallot and garlic until softened. Allow to cool.

In a large bowl, combine the cooled shallot mixture, sausage meat, cheddar, chestnuts and a little salt and pepper.

Unroll the pastry onto a chopping board. Along one long edge, place the sausage meat, shaping into a long sausage, the length of the pastry. Now brush the other long edge with egg wash and then tightly roll over until the pastry is rolled up with the seam of the pastry underneath.

Using a sharp knife, cut the pastry roll into 12-14 pieces and place on a lined baking tray. Brush the tops with egg and sprinkle over the nigella seeds. Bake in the oven for 10-15 minutes until the pastry is puffed and golden and the meat is cooked. Remove from the oven and allow to cool for 5 minutes.
