Pan Fried Cod with Caper Butter Sauce and Griddled Asparagus

Here is a quick dinner recipe for you! This dish is so quick and easy and completely moorish and delicious.

Pan Fried Cod with Caper Butter Sauce and Griddled Asparagus

Serves 2

Cook time 15 minutes
Prep time 10 minutes

1 tbsp Olive Oil
2 Cod fillets
200g Asparagus, trimmed

100g Butter
1 tbsp Capers
1/2 Lemon, juiced
1 tsp Parsley, chopped

Heat the olive oil in a frying pan on medium Β and heat a griddle pan dry. Pat the cod fillets dry on kitchen towel and season both sides with salt and pepper. Place into the cod into the frying pan and cook for around 4-5 minutes per side depending on the thickness of the fish. The fish will flake once cooked.

Meanwhile, place the trimmed asparagus onto the griddle and allow to cook for 3-4 minutes until griddle marks appear and the asparagus is softened slightly.

Once the cod is cooked, remove from the pan and set aside. Melt the butter in the same pan and add in the capers with a little salt and pepper (be careful with the salt as capers can be very salty!). Mix together and then add in the lemon juice and parsley.
